This cookbook celebrates the many uses for the key oils and vinegars, and explains their characteristics, uses in cooking, health benefits and origins. There is plenty of information about specific oils, followed in each case by one or more recipes in which they are the focal ingredient.
Liz Franklin was a finalist in the 1996 BBC TV Masterchef competition and went on to make a series of cooking programmes for BBC Radio. She was food editor for Good Health magazine and is now a freelance cook, food writer and stylist who has just set up a cookery and wine education school in Italy.
